Sake-kasu, a new product from Chidoriya, is freeze-dried sake lees derived from the Daiginjo Shu manufacturing process. As a byproduct of sake production, the liquid obtained from unrefined sake is transformed into a well-known alcoholic beverage, while the remaining residue becomes the sake-lees. These lees are rich in nutrients from the yeast, including carbohydrates, protein, fiber, vitamin B, and more, making it an ideal health food and natural ingredient in skincare. In Japan, Sakekasu is commonly used in everyday dishes such as Kasujiru (sake-lees soup), pickles, and desserts, as well as in beauty treatments.

Kojic acid is a by-product of the fermentation process of sake. The skin-brightening effect of kojic acid was discovered purely by chance. While at a Japanese sake brewery, a scientist noticed that the workers' hands looked beautiful and young.
