Sake-kasu, a new product from Chidoriya, is freeze-dried sake lees derived from the Daiginjo Shu manufacturing process. As a byproduct of sake production, the liquid obtained from unrefined sake is transformed into a well-known alcoholic beverage, while the remaining residue becomes the sake-lees.
